Position: EXECUTIVE CHEF

TAMANU ON THE BEACH BOUTIQUE RESORT / RESTAURANT EXECUTIVE CHEF
We are seeking the services of an experienced Executive Chef who is fully trained and has solid experience in a similar capacity in Vanuatu.
Applicants are required to have in-depth experience of all aspects of kitchen management principles involving planning, resource allocation and coordination, purchasing, production methods, and coordination and training of people. You will possess a passion for the role and be a procedurally driven professional ensuring the profitable operation of the business. Your duties will include:
- Menu creation - Food preparation and direction to produce consistently exceptional food quality - Development, implementation & documentation of kitchen procedures - Training of kitchen personnel to ensure compliance, quality and consistency - Purchasing and ensuring reduced F & B costs - Stock control - Rostering of kitchen staff - Kitchen and culinary management of functions and events
Tamanu's restaurant is open 7 days/week - 7.30am to 9.30pm. You will manage and roster a kitchen brigade of 5 including 2 other chefs. Tamanu's a la carte restaurant is known as one of the best in Vanuatu. Your role will be to make it consistently 'the' best, without exception. Employment commencement will be 27 May 2013.
