We are looking to recruit a Senior Sous Chef for our icon properties in The Cook Islands. The successful applicant will be required to fulfill the following duties:
• Work under the direction of the Executive Chef & Head Chefs to ensure high standards of work productivity and food preparation are maintained throughout the restaurant and bar area. • Assist with the training of all staff members and to ensure all staff receive full training in their daily duties. • Write accurate mise en place lists according to level of business. • Ensure the quality and presentation of all food meets the specified standards • Ensure all Resort and kitchen policies and procedures are implemented and adhered to. • Oversee the cleanliness of the kitchen ensuring hygiene standards are always maintained . • Daily checking of all fridges and freezers, to ensure they are in order, all food is wrapped, labelled and dated and food storage is compliant with food standards

The successful candidate will have to pass police clearance processes and medicals before an attractive 2 year contract is offered.
