Café Vila at Nasama Resort is looking for a talented and experienced Sous Chef who we can train to become our Executive Chef. We are one of the best restaurants in Vanuatu and are well known for our delicious meals, relaxing ambience and friendly staff.
JOB BRIEF We need someone creative and proficient in all aspects of food preparation with the ability to maintain complete control of the kitchen. The main focus will be on cost control and reduction of waste.
RESPONSIBILITIES -Plan and direct food preparation and culinary activities. -Keep food cost in check: control portion sizes, purchasing quantities, food wastage. -Modify menus or create new ones that meet top quality standards. -Maintain consistency of menu items in presentation, quality and serving size. -Initiate procedures and systems to eliminate pilferage. -Recruit, train and manage kitchen staff; set clear and consistent expectations; improve employee attendance and productivity; ensure company policy is followed. -Comply with nutrition and sanitation regulations and safety standards. -Arrange for equipment purchases and repairs. -Handle problems or complaints from customers. -Maintain a positive and professional approach with staff and customers.
REQUIREMENTS -Proven working experience as a Sous Chef or Head Chef in a Resort or restaurant. -Excellent record of kitchen management. -Able to spot and resolve problems efficiently. -Capable of multitasking. -Have excellent communication and leadership skills. -Keep up with cooking trends and best practices. -Have working knowledge of various computer software programs (MS Office, restaurant management software, POS). -BS degree in Culinary science or related certificates a plus.
