OVERVIEW

Situated on Efate Island’s Pango Beach, Nasama Resort is a short drive from Port Vila, Vanuatu’s capital. It is a 4-1/2 star beachfront resort comprising of 43 spacious apartments. Surrounded by crystal-clear waters, vibrant coral reefs, and swaying palm trees, Nasama Resort provides a serene escape from everyday life. 

Café Vila and Three Pigs are the two on-site restaurants for Nasama Resort. Currently ranked # 1 and # 3 on Tripadvisor, Café Vila offers gourmet local and international cuisine, while Three Pigs offers delicious pizzas, burgers and tacos. The emphasis is on fresh local produce in a relaxed, comfortable dining environment.

 

JOB BRIEF

We are looking for a professional Food and Beverage Manager to be responsible for managing both restaurants and bars. The successful candidate will be able to forecast, plan and manage all F&B operations, the staff and finance. The goal is to maximize sales and revenue through customer satisfaction and employee engagement.

 

RESPONSIBILITIES

  • Manage Food and Beverage operations within budget and to the highest standards
  • Lead the restaurant team by attracting, recruiting, training and rostering restaurant and bar staff.
  • Plan menus by consulting with chefs; estimate food costs and profits; adjust menus.
  • Maintain high standards of quality control in food and service. 
  • Report to management regarding sales results and productivity.
  • Control costs by reviewing portion control and quantities of preparation; minimize waste; ensure high quality of preparation; monitor accuracy of charges.
  • Manage food and drink purchases from suppliers.
  • Maintain a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures.
  • Maintain ambiance by controlling lighting, background music, glassware, dinnerware, and utensil quality and placement; monitor food presentation and service.
  • Promote and market restaurant and bar through events and social media.

SELECTION CRITERIA

  • Minimum 2 years’ experience in a similar position.
  • Knowledge of various computer software programs (MS Office, restaurant management software, POS).
  • Knowledge of Excel and basic accounting procedures to produce Profit & Loss Statements, create and analyse reports to increase sales and profits.
  • Able to work extended hours.  Able to spot and resolve problems efficiently.
  • Have excellent management and organisational skills.
  • Keep updated with food and beverage trends and best practices.
  • Guest-oriented and service-minded with attention to detail.

REMUNERATION

Salary: According to skills and experience.

Contract period: One year renewable by mutual agreement

For overseas candidates: Accommodation and return airfare once a year
